Draft Regulation of the Minister for Rural Affairs on hygiene requirements for the building, construction design and equipment of a business for the small-scale handling of food
The draft Regulation establishes adaptations of the hygiene requirements of Annex II of Regulation (EC) No 852/2004 and Annex III of Regulation No 853/2004 for small businesses. A small-scale business, including a small slaughterhouse, is defined in the draft Food Act, which is submitted for notification as a separate document. The draft Regulation establishes comparative rates in livestock units for a small slaughterhouse and adapted hygiene requirements for the building, construction design and equipment of a small business and small slaughterhouse. In observing the adapted hygiene requirements, food safety must be ensured, and measures ensuring food safety must be described in a self-regulatory plan.
