The draft Production Specifications for durum wheat and derivatives applies to the agricultural production of durum wheat grain for pasta making, to the production of wholemeal flour and semolina for pasta making, to the production of dry pasta and wholemeal dry pasta.
The method of production is described for each product and, in the case of processed products, the methods and the technologies of processing and packaging are also described.
In the draft Specifications indications are provided regarding the ‘Control System’.
Furthermore, for each product in compliance with the procedures for drafting the specifications of the Guidelines, the following areas of intervention and the specific principles observed in the draft Specification are indicated, from which the requirements that will give the product a quality significantly higher than commercial standards in terms of public health and environmental protection are deduced and that the products in question bearing the quality mark will have specific characteristics different from those of a comparable product without a mark.
