MAPA/SDA Ordinance No. 495 opens a 60-day period for public consultation on proposal of technical regulation of identity and quality of ham. At MAPA/SDA Ordinance nº 495 ham according to article 2 means "a meat product, obtained from the meat of one or more animal species, with or without the addition of giblets and edible animal parts, processed, seasoned, with the addition of ingredients and submitted to a specific thermal process."
