Marketed sauces

The notified draft Order aims primarily to:

·        adjust certain categories of sauces, in particular by creating an "Extra Soy Sauce" category and by revising the specifications applicable to certain mustards and soy sauce;

·        update the list of ingredients permitted under several categories of sauces in order to better reflect the sector's manufacturing practices;

·        revise certain physicochemical criteria applicable to harissa, tomato sauce, and ketchup.
