The notified Sanitary Technical Regulation applies to all national or foreign natural or legal persons involved or engaged in the manufacturing, production, processing, preparation, packaging, packing, assembly, transportation, storage and marketing in Ecuador of processed foods for human consumption, as well as to mass catering establishments.

The aim of the notified Sanitary Technical Regulation is to establish the good manufacturing practices (GMP) requirements for food processing plants, as well as the requirements for the manufacturing, production, processing, preparation, packaging, packing, assembly, transportation, storage and marketing of processed foods for human consumption. It also lays down the requirements for: obtaining sanitary certificates for domestic and foreign processed foods, the registration of GMP certificates, the approval of GMP certificates, the authorization of foods processed on GMP-certified lines, obtaining free sale certificates, obtaining sanitary export certificates, obtaining operating permits, hygiene conditions in mass catering establishments and the donation of processed foods, with the aim of protecting public health and ensuring a safe food supply.
