The notified draft Resolution updates and establishes the limits for the microbiological criteria to be met by food and beverages for human consumption in order to ensure microbiological acceptability, which will be verified by the health authorities through inspection, monitoring and control activities, with the aim of protecting consumer health.

To update these standards, the Ministry of Health and Social Welfare took into account the international recommendations of the Codex Alimentarius and the International Commission on Microbiological Specification for Foods (ICMSF), in which the type of sample and the sampling plan's 'n' and 'c' values are determined according to the degree of risk and the conditions of use of the food.
