Product specification in the High Quality Food (KMÉ) national quality scheme for breads (made with an indirect sourdough method)
The notified draft replaces the product specification for breads (made with the indirect sourdough method) in the High Quality Food (KMÉ) national quality scheme previously notified under No 2025/200/HU. Under the heading “Optional elements” in the Specific Certification Requirements, more precisely under sub-heading “II. Sustainability”, new points have been formulated for sustainability, significantly expanding the range of optional elements. In addition, requirements relating to wild yeast have been established.
