The Ordinance on the sampling frequencies for carcasses, minced meat and meat preparations as well as the conditions and manner of reducing the number of sample units in lower capacity establishments, lays down the frequency of sampling at approved establishments processing food of animal origin, operating on a smaller capacity, and allows for the reduced frequency with respect to the requirements laid down in Commission Regulation (EC) No 2073/2005 of 15 November 2005 on microbiological criteria for foodstuffs (OJ L 338, 22, p.
