The notified Technical Regulation establishes the specifications to be met by unripened cheese, including fresh cheese, i.e. cheese that is ready for consumption immediately or shortly after manufacture. The Regulation applies to unripened cheese, including fresh cheese, intended for direct human consumption or further processing in the territory of the States Parties.
