Notice of Modification to the List of Permitted Food Additives with Other Accepted Uses to Enable the Use of Copper Sulphate in Preserved Duck Eggs - Reference Number: NOM/ADM-0106.

Health Canada's Food Directorate completed a detailed safety assessment of a food additive submission seeking approval for the use of copper sulphate in the manufacture of preserved duck eggs.

Copper sulphate is already permitted for use in Canada as a food additive, more specifically as a fining agent in wine. The intended use of copper sulphate in the manufacturing process of preserved duck eggs is to improve consistency in achieving the desired characteristics of the finished product.
