Draft Decree regulating artisan food

The aim of the draft decree is to regulate the use of the term ‘artesano’ [artisan] or ‘artesanal’ [artisanal] for food products and entails the development of legislation under Chapter III, Title III of Law 2/2005 of 18 February 2005 on the promotion and protection of food quality in Galicia. Under this draft decree, artisanal products must be produced in a manner that meets certain conditions throughout the production process and, while being environmentally friendly, guarantees the consumer an end product that is unique, safe from a health and hygiene perspective, of good quality and has distinguishing characteristics. The end product must also come from a small-scale production overseen personally by the artisan.

In addition, artisanal products must be produced in accordance with the specific practices laid down for each type of product in the corresponding technical standard, which sets out the permitted and prohibited practices.
