This technical specification lays down the standards for the establishment and operating rules for retail outlets that sell pork prepared in accordance with the specifications of the Management System for Quality Assurance of Pork (in short ‘retail outlets’), so as to ensure that the product’s current hygiene and quality is maintained until the moment it is sold, thereby covering the relevant national and Community provisions, preserving traceability between raw materials, intermediate and finished products, and linking certified production and processing facilities.

Implementation of this standard is a condition for a retail outlet participating in the Management System for Quality Assurance of Pork.

This category of pork retail outlets only includes those that sell pork not coming from any other source, unless the establishment has an electronic warehouse management system connected to the cash register.
