Technical Specification - Management System for Quality Assurance of Pork. Specification on the slaughtering of pigs

This technical specification outlines the requirements for slaughtering pigs and allows the slaughterhouse to design its production processes to contribute to the quality assurance of the pork produced.

This standard can be used by all slaughterhouses wishing to:

a) put in place, implement and maintain particular specifications to document the quality of their pork carcasses;

b) ensure that their pig slaughtering process complies with the requirements that have been laid down;

c) demonstrate such compliance to interested parties;

d) request certification for the slaughtering of pigs;

e) join the Management System for Quality Assurance of Pork.
